Shrouded in mist and rainforest cloud, Finca Deborah thrives at extraordinary elevation, where cool temperatures slow the metabolism of its coffee trees. These crisp 10 °C conditions encourage the cherries to accumulate exceptional sugars, resulting in a sweetness and complexity that is truly remarkable.
Nirvana begins with the meticulous harvest of perfectly ripe Gesha cherries, carefully measured at 21–24 °Brix. Each cherry is hand-selected a second time before being placed into hermetically sealed, nitrogen-infused tanks, where it undergoes an extended fermentation of over 50 hours under precise monitoring of both pH and temperature.
After this meticulous process, the coffee is gently transferred to shaded, raised African drying beds. Here, the beans develop their extraordinary flavor profile in a controlled, sun-filtered environment, producing a coffee that is both exquisite and unforgettable—an indulgence for those who truly appreciate the art of exceptional coffee.
